Chocolate Brandy Pudding

Ingredients

  • 180 g dark chocolate
  • 140 g unsalted butter
  • 3 eggs
  • 4 egg yolks
  • 125 g caster sugar
  • 125 g plain flour
  • 60 ml brandy
  • cocoa, to dust

Instructions

  1. Preheat oven to 180 C.
  2. Lightly grease 8 ramekins.
  3. Melt cho and butter in bowl over pot of simmering water.
  4. Set aside when combined and melted.
  5. Using electric beaters beat sugar and eggs and yolks together till pale.
  6. Fold choc mixture into egg mixture alternately with flour.
  7. Spoon pudding into ramekins, cook 15 minutes till just set.
  8. Set aside for 15 minutes then pour a little brandy over each pudding.
  9. Dust with cocoa and serve with ice cream.
