Chocolate Churros

Ingredients

  • 1/2 cup milk
  • 6 tbsp butter, chopped
  • 1 1/4 cups flour, sifted
  • 1 None large egg, lightly beaten
  • 2 oz dark chocolate, grated
  • None None vegetable oil, for deep frying
  • 1 cup sugar
  • 1 tsp ground cinnamon
  • None None coffee, to serve

Instructions

  1. For the batter, combine milk, butter and 1/2 cup water in a medium saucepan. Heat on low until butter melts, then bring to a boil. Add flour to pan all at once and beat vigorously with a wooden spoon until mixture comes away from the sides of the pan. Remove from heat and cool slightly. Add egg, beating until well combined. Beat in chocolate.
  2. Heat oil in a deep fryer or large saucepan on high, until a little batter sizzles immediately when added. Spoon batter into a piping bag fitted with a 3/4 inch star nozzle. Carefully pipe the batter, in 2 inch strips, into the oil in small batches. Lower heat and deep-fry for 2-3 mins, turning, until golden brown and cooked through. Drain on paper towels.
  3. Combine the sugar and cinnamon in a bowl. Toss hot churros in the sugar mixture and serve with coffee.
