Chocolate Cornflake Bars

Ingredients

  • 1/2 cup shredded coconut
  • 3/4 cup brown sugar
  • 1 2/3 cups self-rising flour, sifted
  • 2 3/4 cups cornflakes
  • 3 oz dark chocolate chips
  • 3/4 cup butter, melted, cooled
  • 1 None large egg, beaten lightly
  • 4 oz dark chocolate, melted

Instructions

  1. Preheat oven to 350°F. Grease an 8x12 inch baking pan and line base and long sides with parchment paper, extending paper 1 inches above edges.
  2. Combine coconut, sugar, flour, cornflakes and chocolate chips in a large bowl. Whisk together butter and egg then pour over dry ingredients and toss until coated evenly. Press mixture into base of prepared pan. Bake for 20 mins, or until light golden brown. Let stand in pan for 5 mins then transfer to a wire rack to cool completely.
  3. Cut into bars. Transfer melted chocolate to a small piping bag and drizzle over each piece.
