Ingredients

  • 1/2 cup light corn syrup
  • 1 cup sugar
  • 1 teaspoon vanilla
  • 1 cup chocolate
  • 1 egg white
  • 1/2 cup cornstarch
  • 2 cups shredded coconut
  • 2 tablespoons butter
  • 1/4 teaspoon salt

Instructions

  1. Preheat oven to 375°F. Butter and flour a baking sheet.
  2. In a medium bowl, combine coconut and cornstarch; set aside.
  3. In a saucepan, mix light corn syrup, sugar, vanilla, and butter; heat until smooth.
  4. In a separate bowl, whisk egg white until stiff peaks form.
  5. Fold egg white into the coconut mixture gently.
  6. Shape the mixture into small balls and place on the prepared baking sheet.
  7. Bake in the preheated oven for approximately 10-12 minutes or until lightly golden.
  8. Remove from oven and let cool completely.
  9. Melt chocolate in a double boiler or microwave until smooth.
  10. Dip each cooled snowball into the melted chocolate, allowing excess to drip off.
  11. Place dipped snowballs on a parchment-lined tray and refrigerate until chocolate is set.
