Ingredients

  • 1 cup sifted flour
  • 1/8 teaspoon salt
  • 1/8 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 cup shortening
  • 1/4 cup sugar
  • 1/4 cup brown sugar
  • 1 egg, separated
  • 1 1/2 teaspoons water
  • 1/2 teaspoon vanilla
  • 1/2 package semi-sweet chocolate chips

Instructions

  1. Preheat oven to 375°F and grease a 12 x 8 x 2-inch baking pan.
  2. Sift together the flour, salt, soda, and baking powder; set aside.
  3. Cream together the shortening, white sugar, and 1/4 cup brown sugar until creamy.
  4. Add the egg yolk, water, and vanilla; mix well.
  5. Thoroughly mix in the sifted flour mixture.
  6. Pat the dough into the prepared baking pan.
  7. Sprinkle the semi-sweet chocolate chips evenly over the dough.
  8. Beat the egg white until stiff, then gradually beat in 1/2 cup brown sugar to make a meringue.
  9. Spread the meringue over the chocolate chips evenly.
  10. Bake for about 25 minutes or until done.
  11. Cut into squares while warm and cool in the pan before serving.
