Chocolate-Marble Muffins

Ingredients

  • 2 c. flour
  • 1/2 c. sugar
  • 3 tsp. baking powder
  • 1 tsp. salt
  • 3/4 c. roasted almonds, chopped
  • 1 egg, beaten
  • 3/4 c. orange juice
  • 1/3 c. vegetable oil
  • 1/4 c. cocoa powder

Instructions

  1. Combine flour, sugar, baking powder and salt.
  2. Stir in chopped almonds, reserving some for garnish.
  3. Combine egg, orange juice and oil.
  4. Stir into dry ingredients until mixed.
  5. Remove half of batter; stir in cocoa and set aside.
  6. To remaining batter, stir in orange peel.
  7. Place paper liners in standard-size 12-muffin pan. Holding pan tipped slightly to side, spoon orange batter into one side of muffin liner.
  8. Fill other side of liners with chocolate batter.
  9. Sprinkle with reserved almonds.
  10. Bake at 400° for 20 minutes.
  11. Serve warm.
  12. Makes 1 dozen.
