Ingredients

  • 6 Tbsp. sugar
  • 2 Tbsp. plus 2 tsp. cornstarch
  • 2/3 (10 oz.) pkg. mint flavored semi-sweet chocolate pieces
  • 1 1/2 c. milk
  • 1 c. heavy cream
  • 1 (9-inch) graham cracker crust

Instructions

  1. In a heavy saucepan, combine 4 tablespoons sugar, cornstarch, and mint flavored semi-sweet chocolate pieces.
  2. Gradually stir in milk and cook, stirring constantly, over medium heat until the mixture boils.
  3. Boil for 1 minute, then transfer to a large bowl and cover the surface with plastic wrap.
  4. Cool to room temperature.
  5. In a bowl, combine heavy cream and 2 tablespoons sugar; beat until stiff peaks form.
  6. Beat the cooled chocolate mixture and fold in the whipped cream.
  7. Spoon the mixture into the prepared graham cracker crust.
  8. Chill until firm, about 2 to 3 hours.
