Ingredients

  • 1 package angel food cake
  • 1 square unsweetened chocolate
  • 3 cups heavy cream
  • 1 1/2 cups sifted confectioners' sugar
  • 3/4 cup unsweetened cocoa
  • 1 teaspoon unflavored gelatin
  • 2 teaspoons vanilla
  • 1/4 teaspoon salt
  • Additional chocolate and cream for decorating

Instructions

  1. Prepare the angel food cake according to the package directions, adding grated chocolate to the batter before pouring into the tube pan.
  2. Bake the cake for 30 to 40 minutes.
  3. Cool the cake in the pan by inverting it over a bottle.
  4. Mix the heavy cream, sifted confectioners' sugar, and cocoa; refrigerate until very cold.
  5. Sprinkle the unflavored gelatin over 2 tablespoons cold water; let stand for 5 minutes.
  6. Heat the gelatin over hot water, stirring until dissolved, then let cool.
  7. Once cooled, fold the gelatin into the chilled cream mixture.
