Ingredients

  • 1/2 lb sweet chocolate
  • 6 large eggs
  • 3 Tbsp water
  • 2 c heavy cream
  • 6 Tbsp sugar
  • 1/4 c Amaretto
  • whipped cream for garnish

Instructions

  1. Cut the sweet chocolate into 1/2 inch pieces and place in a saucepan.
  2. Place the saucepan in almost boiling water and cover.
  3. Let the chocolate melt over lowered heat.
  4. Put the egg yolks in a heavy saucepan and add the 3 tablespoons of water.
  5. Place the saucepan over very low heat while beating vigorously and constantly with a wire whisk, being careful not to burn.
  6. When the yolks start to thicken, add the Amaretto.
  7. Continue beating until the sauce reaches the consistency of Hollandaise sauce.
  8. Remove from heat.
