Ingredients

  • 8 1/2 oz. chocolate wafers
  • 1/2 cup butter
  • 1 1/2 pint softened coffee ice cream
  • 1/3 cup cocoa
  • 3 tablespoons butter
  • 2/3 cup sugar
  • 2 tablespoons sugar
  • 1 1/3 cup whipping cream

Instructions

  1. Prepare a 9-inch pie plate for the crust.
  2. Process chocolate wafers until finely crushed and mix with melted butter to form the crust. Press into the pie plate and chill.
  3. In a saucepan, melt 3 tablespoons of butter and cocoa, then stir in 2/3 cup of sugar and 2 tablespoons of sugar until smooth.
  4. In a separate bowl, beat the softened coffee ice cream until smooth, then fold into the cocoa mixture.
  5. Pour the ice cream mixture into the prepared crust and freeze until firm, about 2 hours.
  6. Whip the whipping cream until stiff peaks form, then spread over the frozen pie.
  7. Garnish with semi-sweet chocolate squares before serving.
