Ingredients

  • 8 eggs, separated
  • 1 cup sugar
  • 1/2 cup cocoa
  • 1/2 pound walnuts, chopped
  • 1 teaspoon vanilla

Instructions

  1. Beat egg whites until stiff peaks form.
  2. In a separate bowl, beat egg yolks with sugar until thick and lemon-colored.
  3. Add enough water to cocoa to make a thick paste.
  4. Mix the cocoa paste into the yolk and sugar mixture and blend well.
  5. Add chopped walnuts and vanilla extract to the mixture.
  6. Gently fold in the beaten egg whites.
  7. Pour the batter into a 10-inch spring-form pan.
  8. Bake at 350°F (175°C) for 35 minutes.
  9. Serve with whipped cream if desired.
