Ingredients

  • 1 box puff pastry
  • 1/2 cup fresh goat cheese
  • olive oil
  • 1 medium red onion
  • 1 medium yellow tomato
  • fresh basil leaves

Instructions

  1. Preheat the oven according to puff pastry package instructions.
  2. Unfold the puff pastry sheets and place two-thirds in a lasagna pan or a large cookie sheet.
  3. Spread the fresh goat cheese evenly over the pastry.
  4. Arrange sliced red onion and yellow tomato slices on top of the cheese.
  5. Drizzle with olive oil and sprinkle chopped basil leaves over the top.
  6. Bake until the pastry is golden and cooked through, about 20 minutes.
  7. Remove from oven, let cool slightly, then serve.
