Ingredients

  • 3/4 cup plus 2 tablespoons all-purpose flour
  • 1/4 cup granulated sugar
  • 2 tablespoons unsweetened cocoa powder
  • 1/4 teaspoon salt
  • 4 eggs
  • 1 cup milk
  • 2 tablespoons butter or margarine, melted
  • 1/2 teaspoon vanilla
  • Powdered sugar

Instructions

  1. Position the rack in the lower third of the oven.
  2. Preheat the oven to 375°F. Grease a 6-cup popover pan or six 6-ounce custard cups.
  3. Set the custard cups in a jelly roll pan.
  4. Sift the flour, granulated sugar, cocoa powder, and salt into a medium bowl; set aside.
  5. Beat the eggs in a large bowl with an electric mixer at low speed for 1 minute.
  6. Beat in the milk, melted butter, and vanilla until combined.
  7. Add the flour mixture and beat until smooth.
  8. Pour the batter into the prepared pan or cups.
  9. Bake for 50 minutes until puffed and cooked through.
  10. Immediately remove the popovers to a wire rack.
  11. Generously sprinkle powdered sugar over the popovers and serve immediately.
