Chocolate Popovers

- Position the rack in the lower third of the oven.
- Preheat the oven to 375°F. Grease a 6-cup popover pan or six 6-ounce custard cups.
- Set the custard cups in a jelly roll pan.
- Sift the flour, granulated sugar, cocoa powder, and salt into a medium bowl; set aside.
- Beat the eggs in a large bowl with an electric mixer at low speed for 1 minute.
- Beat in the milk, melted butter, and vanilla until combined.
- Add the flour mixture and beat until smooth.
- Pour the batter into the prepared pan or cups.
- Bake for 50 minutes until puffed and cooked through.
- Immediately remove the popovers to a wire rack.
- Generously sprinkle powdered sugar over the popovers and serve immediately.
