Creamy chocolate rice pudding combines tender rice with rich cocoa and vanilla, topped with fluffy meringue for a comforting dessert perfect for family gatherings.

Ingredients

  • 1/2 cup rice
  • 3 egg yolks
  • big piece of butter
  • 2 to 3 cups whole sweet milk
  • 4 tablespoons cocoa
  • 2 cups sugar
  • pinch of salt
  • 3 or 4 tablespoons cornstarch
  • vanilla flavor

Instructions

  1. Cook rice in a small amount of water until tender, then add milk, salt, sugar, and butter. When nearly boiling, beat egg yolks with cornstarch and add to the mixture.
  2. Mix in cocoa and water or milk; cook until thickened, then add vanilla flavor.
  3. Beat egg whites with 6 tablespoons of sugar and a little flavoring to make a meringue.
  4. Spread the meringue over the pudding and bake in a slow oven until browned.
