Chocolate Scotheroos are rich, chewy treats combining peanut butter, crispy rice, and chocolate coating, perfect for snacking, parties, or satisfying a sweet tooth craving.

Ingredients

  • 1 cup sugar
  • 1 cup light corn syrup
  • 1 cup peanut butter
  • 6 cups rice Krispies
  • 12 oz chocolate chips
  • 6 oz butterscotch or peanut butter

Instructions

  1. In a 3-quart saucepan, combine sugar and corn syrup and cook over medium heat, stirring constantly until bubbles form.
  2. Remove from heat and stir in peanut butter until completely melted.
  3. Add rice Krispies and mix well to coat.
  4. Spread the mixture into a buttered 13x9-inch pan, pressing evenly.
  5. Melt the chocolate chips and butterscotch (or peanut butter) together until smooth.
  6. Spread the melted chocolate mixture over the rice Krispies in the pan.
  7. Allow to harden for several hours before cutting into squares.
