Ingredients

  • 1 cup sugar
  • 2 cups milk
  • 2 eggs, separated
  • 4 or 5 tablespoons cocoa
  • 3 tablespoons cornstarch
  • 1 teaspoon vanilla
  • 8 baked tart shells

Instructions

  1. Blend together sugar, cocoa, and cornstarch in a saucepan.
  2. Add beaten egg yolks and milk to the mixture and stir well.
  3. Cook over medium heat until the mixture comes to a hard boil, stirring constantly.
  4. When thickened, remove from heat, add vanilla, and pour into baked tart shells.
  5. Top each tart with meringue and brown lightly in a 475°F oven.
  6. Allow to cool slightly before serving.
