Ingredients

  • 8 cups sliced, peeled fresh or frozen peaches, thawed
  • 1 cup sugar
  • 1 cup water
  • 2 tablespoons cornstarch
  • 1 teaspoon ground cinnamon
  • 3/4 cup packed brown sugar
  • 1/4 cup margarine or butter, melted
  • 1 1/2 cups chopped pecans
  • 2 cups self-rising flour
  • 2 teaspoons sugar
  • 1/2 cup shortening
  • 3/4 cup buttermilk

Instructions

  1. In a Dutch oven, combine peaches, 1 cup sugar, water, cornstarch, and cinnamon.
  2. Cook and stir until thickened and bubbly.
  3. Transfer the peach mixture to a 3-quart rectangular baking dish.
  4. In a mixing bowl, combine self-rising flour, 2 teaspoons sugar, and shortening to make the biscuit topping.
  5. Stir in buttermilk until just combined.
  6. Drop spoonfuls of the batter over the peach filling.
  7. Sprinkle brown sugar and chopped pecans over the batter.
  8. Bake in a preheated oven at 375°F (190°C) for about 35 minutes or until golden brown.
