Ingredients

  • 4 1/2 pt. whipping cream
  • 1 pkg. chocolate wafers
  • 1/2 to 1 tsp. almond mint extract
  • 2 sq. semi-sweet baking chocolate

Instructions

  1. Whip chilled cream in a deep bowl with chilled beaters until soft peaks form.
  2. Do not overbeat.
  3. Fold in almond mint extract into the whipped cream.
  4. Spread the whipped cream on one chocolate wafer at a time, stacking to form a roll.
  5. Use the same serving dish you wish to serve the yule log in.
  6. Save some wafers for the decorative knot at the end.
