Ingredients

  • 1 box chopped frozen spinach, thawed and drained
  • 2 lb. creamed cottage cheese (small curd)
  • 6 eggs
  • 6 Tbsp. flour
  • 3/4 cup butter or margarine, cut in chunks
  • 1/2 lb. Velveeta cheese, cut in chunks

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large mixing bowl, combine the thawed and drained chopped frozen spinach with the creamed cottage cheese.
  3. Add the eggs and mix well until smooth.
  4. Stir in the flour until fully incorporated.
  5. Cut the butter or margarine into chunks and add to the mixture, stirring until evenly distributed.
  6. Pour the mixture into a greased baking dish.
  7. Sprinkle shredded Velveeta cheese on top if desired.
  8. Bake in the preheated oven for approximately 45 minutes, or until golden and bubbly.
