Christmas Cheesecake
Ingredients
- 1 1/2 c. gingersnap crumbs
- 1 1/3 c. slivered almonds, toasted and divided ⓘ
- 1/2 tsp. ground cinnamon ⓘ
- 1/3 c. melted butter
- 4 (8 oz.) pkg. softened cream cheese ⓘ
- 1 1/4 c. sugar ⓘ
- 1 1/2 tsp. pumpkin pie spice
- 1/2 tsp. ground ginger ⓘ
- 4 eggs ⓘ
- 1 c. canned pumpkin, mashed ⓘ
- 1/4 c. brandy ⓘ
- 3 Tbsp. half and half cream ⓘ
- 16 oz. sour cream ⓘ
- 1/4 c. sugar
Instructions
- Combine gingersnaps, 1/3 cup almonds and cinnamon.
- Add butter; blend well.
- Press evenly into bottom of 10-inch spring-form pan.
- Bake at 425° for 10 minutes.
- Cool completely.
