Festive and flavorful, these cherry-topped cookies combine citrus, vanilla, and nuts for a delightful treat perfect for holiday gatherings and cookie exchanges.

Ingredients

  • 1/2 cup shortening
  • 1 teaspoon vanilla
  • 1 tablespoon lemon juice
  • 1/4 cup sugar
  • 1 tablespoon grated orange rind
  • 1 cup flour
  • 1 egg, separated
  • 1 1/2 tablespoons lemon rind

Instructions

  1. Cream shortening and sugar; add beaten egg yolk, vanilla, orange and lemon rind, and lemon juice and mix well.
  2. Add flour and chill the dough.
  3. Roll into small balls 1/2-inch in diameter.
  4. Roll in slightly beaten egg whites, then in chopped nuts.
  5. Place on a cookie sheet and press a small piece of candied cherry into the center of each cookie.
  6. Bake at 350°F for about 20 minutes.
