- Force the hard-boiled egg yolks through a strainer using the back of a spoon.
- Combine the strained egg yolks with the raw egg yolk.
- Work in the sugar, butter, and shortening into the mixture.
- Add the flour, cinnamon, vanilla, and grated lemon and orange rinds, mixing well.
- Form the dough into a ball and chill.
- Roll out the chilled dough to 1/8-inch thickness.
- Use a doughnut cutter or biscuit cutter to cut out cookies and place them on a cookie sheet.
- Paint each cookie with unbeaten egg white and sprinkle with pistachios.
- Bake at 350°F for 8 to 10 minutes until golden.
