Ingredients

  • 3 hard-boiled egg yolks
  • 1 raw egg yolk
  • 1/2 cup sugar
  • 4 tablespoons butter
  • 4 tablespoons shortening
  • 2 cups flour
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon grated lemon rind
  • 1/2 teaspoon grated orange rind
  • 1 teaspoon vanilla
  • pistachios

Instructions

  1. Force the hard-boiled egg yolks through a strainer using the back of a spoon.
  2. Combine the strained egg yolks with the raw egg yolk.
  3. Work in the sugar, butter, and shortening into the mixture.
  4. Add the flour, cinnamon, vanilla, and grated lemon and orange rinds, mixing well.
  5. Form the dough into a ball and chill.
  6. Roll out the chilled dough to 1/8-inch thickness.
  7. Use a doughnut cutter or biscuit cutter to cut out cookies and place them on a cookie sheet.
  8. Paint each cookie with unbeaten egg white and sprinkle with pistachios.
  9. Bake at 350°F for 8 to 10 minutes until golden.
