Ingredients

  • 10 medium potatoes, cooked with skins on
  • 1/4 cup butter
  • 2 cups sour cream
  • 1/3 cup chopped green onions
  • 1 1/2 cups grated Cheddar cheese
  • 1 can cream of chicken soup

Instructions

  1. Peel and grate the cooked potatoes with skins on.
  2. In a saucepan, heat the cream of chicken soup with the butter until warmed.
  3. Add the sour cream and grated Cheddar cheese to the hot mixture and stir until melted and smooth.
  4. Combine the cheese mixture with the grated potatoes and chopped green onions.
  5. Transfer the mixture to a buttered casserole dish.
  6. Top with corn flake crumbs.
  7. Bake at 350°F (175°C) for 45 minutes until golden and bubbly.
