Ingredients

  • 6 egg yolks
  • 1/2 tsp. salt
  • 3 Tbsp. sugar
  • 1 Tbsp. brandy or rum
  • 5 Tbsp. sour cream
  • 2 1/2 c. flour
  • oil for frying
  • powdered sugar

Instructions

  1. Add salt to egg yolks and beat until thick and lemon colored.
  2. Add sugar and flavoring (brandy or rum) to the egg yolk mixture and mix well.
  3. Add sour cream and flour alternately, beating well after each addition.
  4. Add more flour if needed so the dough is not too moist and can be rolled out easily.
  5. Roll out the dough on a floured surface until 1/8-inch thick.
  6. Cut the dough into strips about 3 to 4 inches long.
  7. Make a slit in the center of each strip and pull one end through it to form a twist.
  8. Heat oil for frying and fry the twists until they are slightly brown.
  9. Drain the fried twists on paper towels.
  10. Sprinkle with powdered sugar before serving.

Tips & Substitutions

For a lighter texture, ensure the egg yolks are beaten until thick and lemon colored. If you don't have brandy or rum, a splash of vanilla extract can work as a substitute. Be cautious with the amount of flour; adding too much can make the twists dense. If the dough is too sticky, dust with flour while rolling. Chill the dough for easier handling if needed.

Serving Suggestions

Serve Chrusciki Twists dusted with powdered sugar for a delightful treat. They pair beautifully with coffee or tea, making them perfect for brunch or dessert. For a festive touch, consider serving them alongside a fruit compote or a scoop of ice cream. Enjoy them at gatherings or as a special snack during holidays.

Storage & Reheating

Store any leftover Chrusciki Twists in an airtight container at room temperature for up to three days. To maintain their crispness, avoid refrigerating them. Reheat briefly in a preheated oven at 350°F (175°C) for about 5 minutes to restore their crunch before serving.

Frequently Asked Questions

Can I make the dough ahead of time?

Yes, you can prepare the dough in advance. Wrap it tightly in plastic wrap and refrigerate for up to two days. Allow it to come to room temperature before rolling out. This allows the flavors to develop while making it easier to handle when you're ready to fry.

What type of oil is best for frying?

For frying Chrusciki Twists, use a neutral oil with a high smoke point, such as vegetable oil or canola oil. This ensures the twists cook evenly without imparting any strong flavors. Avoid using olive oil as it may alter the taste and has a lower smoke point.

Can I freeze Chrusciki Twists?

Yes, you can freeze Chrusciki Twists. Allow them to cool completely, then place them in a single layer on a baking sheet and freeze until solid. Transfer to a freezer bag for up to three months. To enjoy, thaw at room temperature and re-crisp in the oven.
