Ingredients

  • cucumbers
  • 7 Tbsp. salt
  • 1 qt. water
  • 1 qt. vinegar
  • 4 c. sugar
  • 1 Tbsp. mustard seed
  • 1 tsp. curry powder
  • 1/4 tsp. ground mustard

Instructions

  1. Cut cucumbers into chunks or slices.
  2. Soak cucumbers in salt water for 5 hours or overnight.
  3. Prepare a brine by boiling water, vinegar, sugar, mustard seed, curry powder, and ground mustard.
  4. Drain the pickles from the salt water.
  5. Add drained pickles to the hot vinegar mixture.
  6. Heat the mixture without boiling.
  7. Seal the hot pickles in sterilized jars.
