Ingredients

  • 4 qt. tomatoes
  • 1 1/2 c. chopped celery
  • 1 c. chopped green pepper
  • 1 c. chopped yellow pepper
  • 2 c. chopped onions
  • 15 to 16 Herndez jalapenos, stemmed and seeded
  • 3 Tbsp. olive oil
  • 1/2 c. sugar (optional)
  • salt and pepper to taste

Instructions

  1. Drain tomatoes; save the juice.
  2. Put tomatoes and jalapenos in a food processor.
  3. Add tomato juice gradually to achieve desired moisture and consistency.
  4. Sauté onions, celery, and peppers in olive oil until tender, but do not overcook.
  5. Let the mixture cool.
  6. Mix all ingredients together thoroughly.
  7. Pour the salsa into jars and seal.
  8. Makes about 4 to 5 quarts.
