Ingredients

  • 3 c. tomato juice
  • 2 fresh tomatoes, coarsely chopped
  • 2 Tbsp. dry vermouth or Marsala wine
  • 1 tsp. lemon juice
  • 1/2 tsp. dried mint leaves
  • 1 tsp. chopped frozen and fresh mint
  • 1/2 tsp. celery seed

Instructions

  1. Combine all the ingredients in a 2-quart casserole.
  2. Cover tightly and cook on High for 6 to 9 minutes, or until heated through.
  3. Serve each 3/4 cup portion with 2 Melba toasts.
