A traditional Italian ring-shaped cake with citrus and anise flavors, topped with foamy egg whites and sugar, perfect for celebrations or afternoon tea.

Ingredients

  • 1 cup sugar
  • 1 cup shortening
  • 1/4 stick butter or margarine
  • 4 eggs
  • 1 cup milk
  • 3 cups flour
  • 3 1/2 teaspoons baking powder
  • 1 tablespoon lemon juice
  • rind of one lemon
  • 1 glass Anisette
  • 1 glass whiskey

Instructions

  1. Cream butter and sugar until creamy.
  2. Add eggs, all but 2 egg whites, and beat well.
  3. Alternate adding flour and milk to the mixture, mixing thoroughly.
  4. Add lemon juice and whiskey to the batter.
  5. Beat the 2 reserved egg whites until foamy, but not stiff.
  6. Fold the foamy egg whites into the batter.
  7. Pour the batter into a round pan with a hole in the center.
  8. Bake at 350°F for 1 hour.
  9. Sprinkle with sugar before serving.
