Ingredients

  • 8 oz. almond paste
  • 1 c. butter or margarine
  • 1 c. sugar
  • 4 egg yolks
  • 4 egg whites
  • 2 c. sifted all-purpose flour
  • 20 drops red food coloring
  • 12 drops green food coloring
  • 1/4 c. seedless red raspberry jam
  • 1/2 c. apricot preserves
  • 6 oz. semi-sweet chocolate pieces

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Grease the bottom of three 13 x 9 x 2-inch baking pans and three wire racks.
  3. Line the pans with waxed paper and grease the wax paper.
  4. Prepare almond paste or filling, butter, sugar, egg yolks, and egg whites as needed for your recipe.
  5. Mix ingredients according to your specific recipe instructions.
  6. Divide the dough and color portions with red and green food coloring as desired.
  7. Layer or shape the dough as instructed to create the Neapolitan effect.
  8. Bake in the preheated oven until golden, approximately 20 minutes.
  9. Allow to cool, then spread red raspberry jam and apricot preserves between layers.
  10. Melt semi-sweet chocolate pieces and spread over the assembled cookies or dip as desired.
  11. Let the chocolate set before slicing and serving.
