Ingredients

  • 2 c. flour
  • 2 tsp. cinnamon
  • 1/2 tsp. salt
  • 1 1/2 c. sugar
  • 2 tsp. baking soda
  • 3 eggs
  • 1/2 c. melted margarine
  • 2 c. ripe mangoes
  • 1/2 c. shredded coconut
  • 1/2 c. salad oil
  • 1/2 c. raisins
  • 1/2 c. walnuts

Instructions

  1. Sift flour, cinnamon, salt, sugar and baking soda together in a large bowl.
  2. Then add the eggs, margarine, mangoes, coconut, salad oil, raisins and walnuts.
  3. Mix all ingredients together. Pour into four small loaf pans.
  4. Let stand for 20 minutes.
  5. Bake in a 350° oven for 1 hour.
  6. Store in refrigerator.
