Ingredients

  • 2 cups all purpose flour
  • 1 cup oatmeal
  • 1/2 cup plus 3 tablespoons sugar
  • 1 tablespoon baking powder
  • 1/4 teaspoon salt
  • 8 tablespoons margarine
  • 2/3 to 3/4 cup milk
  • 1 egg
  • 1 teaspoon vanilla
  • 1/2 cup toasted, chopped pecans

Instructions

  1. Preheat oven to 425°F and spray a cookie sheet with cooking spray.
  2. In a large bowl, combine flour, oats, 1/2 cup sugar, baking powder, and salt; mix well.
  3. Cut in the chilled margarine until the mixture resembles coarse crumbs.
  4. In a small bowl, combine milk, egg, and vanilla; add to the dry ingredients and stir until completely moistened.
  5. In another small bowl, mix the remaining 3 tablespoons of sugar, cinnamon, and chopped pecans.
  6. Sprinkle the cinnamon pecan mixture evenly over the dough and gently swirl to create a marbled effect.
  7. Drop dough by tablespoonfuls onto the prepared cookie sheet, spacing about 2 inches apart.
  8. Bake for 10 to 12 minutes until golden brown.
  9. Drizzle glaze over the warm scones before serving.
