- Use large cucumbers for the pickles.
- Peel, slice into 1/4-inch thick rings, and core out the centers.
- Place the cucumber rings in a large pan or gallon glass jar.
- Mix pickling lime with enough water to cover the cucumbers and let stand for 24 hours, then drain.
- Wash the cucumber rings in clean water.
- Soak the cucumber rings in cold water for 3 hours.
- Mix red food coloring, powdered alum, and enough water to cover the cucumbers in a large kettle.
- Simmer the mixture for 2 hours.
- Drain the cucumbers after simmering.
- Bring vinegar, sugar, 1 cup water, cinnamon sticks, and red hots to a boil.
- Pour the hot syrup over the cucumbers.
- Reheat the syrup for 3 days, then pour it over the cucumbers again.
- After 3 days, pack the cucumber rings into hot jars and pour hot syrup over them.
- Seal the jars.
