Ingredients

  • large cucumbers
  • 1 c. pickling lime
  • 1 small bottle red food coloring
  • 1 Tbsp. powdered alum
  • 1 c. vinegar
  • 5 c. sugar
  • 1 c. water
  • 4 sticks cinnamon
  • 3/4 c. red hots

Instructions

  1. Use large cucumbers for the pickles.
  2. Peel, slice into 1/4-inch thick rings, and core out the centers.
  3. Place the cucumber rings in a large pan or gallon glass jar.
  4. Mix pickling lime with enough water to cover the cucumbers and let stand for 24 hours, then drain.
  5. Wash the cucumber rings in clean water.
  6. Soak the cucumber rings in cold water for 3 hours.
  7. Mix red food coloring, powdered alum, and enough water to cover the cucumbers in a large kettle.
  8. Simmer the mixture for 2 hours.
  9. Drain the cucumbers after simmering.
  10. Bring vinegar, sugar, 1 cup water, cinnamon sticks, and red hots to a boil.
  11. Pour the hot syrup over the cucumbers.
  12. Reheat the syrup for 3 days, then pour it over the cucumbers again.
  13. After 3 days, pack the cucumber rings into hot jars and pour hot syrup over them.
  14. Seal the jars.
