Ingredients

  • 1 cup soft margarine
  • 1 1/2 cups confectioners sugar
  • 2 1/4 cups sifted flour
  • 1 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla

Instructions

  1. In a large bowl of an electric mixer, at medium speed, beat the margarine until light and fluffy.
  2. At low speed, blend in 1/2 cup sugar, sifted flour, 1/2 teaspoon cinnamon, salt, and vanilla until the dough is stiff.
  3. Chill the dough in the refrigerator for 30 minutes.
  4. Preheat the oven to 400°F.
  5. Lightly grease a cookie sheet.
  6. Roll the dough into 1-inch balls using your fingers.
  7. Place the balls 2 inches apart on the prepared cookie sheet and bake for 10 minutes.
  8. On a piece of waxed paper, combine the remaining sugar and cinnamon.
  9. While the cookies are hot, roll them in the cinnamon-sugar mixture.
  10. Place the coated tea cakes on wire racks and allow to cool.
