Ingredients

  • 4 scallions
  • 2 lemons
  • 1/2 tsp salt
  • 2 Tbsp olive oil
  • 3/4 tsp basil
  • 8 thin pork cutlets
  • 2 oranges
  • 3 Tbsp flour
  • 1/2 tsp pepper
  • 1 tsp brown sugar
  • 3/4 tsp oregano

Instructions

  1. Cut the scallions into 2-inch lengths.
  2. Using a sharp knife, cut thin strips of zest (about 1/2-inch wide) from 1 orange and 1 lemon.
  3. Space the zest strips about 1/2-inch apart to create a striped effect.
  4. Cut the orange and lemon crosswise into thin slices.
  5. Grate the zest from the remaining orange and lemon.
  6. Juice the orange and lemon to measure out 1/4 cup of juice each.
