Ingredients

  • 4 slices bacon
  • 2 c. chopped onion
  • 4 c. cubed potatoes
  • 2 (10 1/2 oz.) cans minced clam or equivalent in fresh
  • 4 c. half and half (2 pt.)
  • 4 Tbsp. margarine or butter

Instructions

  1. Sauté bacon until almost crisp, then chop into pieces.
  2. Add chopped onion to the pan and cook for 5 minutes.
  3. Add cubed potatoes, a pinch of salt, pepper, and 2 cups of water.
  4. Cook uncovered for 15 minutes or until potatoes are tender.
  5. Drain clams, reserving one cup of the clam liquid.
  6. Add clams, butter, half and half, and the reserved clam liquid to the pot.
  7. Stir well and let cook on low until the chowder reaches desired thickness.

Tips & Substitutions

For a richer flavor, consider using smoked bacon instead of regular. If you're looking for a lighter version, substitute half of the half-and-half with low-fat milk. Fresh clams can be used instead of canned; just ensure they are cleaned and cooked properly. If you prefer a thicker chowder, you can mash some of the potatoes before adding the liquid.

Serving Suggestions

Serve the clam chowder hot, garnished with fresh parsley or thyme for a pop of color. It pairs beautifully with crusty bread or crackers for dipping. For a complete meal, consider serving it alongside a fresh salad or a side of Lynn'S Baked Beans to complement the flavors. A sprinkle of Old Bay seasoning can also enhance the chowder's taste.

Storage & Reheating

Store leftover clam chowder in an airtight container in the refrigerator for up to 3 days. To reheat, gently warm it on the stove over low heat, stirring occasionally, until heated through. Avoid boiling, as this can affect the texture of the clams. If the chowder thickens too much, add a splash of water or milk to reach your desired consistency.
