Clarice'S Pickled Beets

Ingredients

  • 7 qts. beets, cooked and cut up
  • 8 c. cider vinegar
  • 8 c. sugar
  • 3 c. water
  • 1 t. salt
  • 3 heaping T. pickling spices
  • 3 cinnamon sticks
  • 7-8 whole cloves
  • 1 cinnamon leaf, if available

Instructions

  1. Mix all ingredients together except for beets. Bring to a boil and boil for 15-20 minutes. Add beets and bring to a full boil again for 10 minutes. Put into sterilized jars immediately and seal with sterilized tops. Makes 7-8 quarts.
