Ingredients

  • 1/4 cup margarine
  • 1/2 cup packed brown sugar
  • 6 or 7 slices pineapple, drained
  • 10 to 12 cherries, drained
  • 1 package gingerbread mix

Instructions

  1. Melt margarine in an 8 x 8-inch baking pan.
  2. Stir in brown sugar until dissolved.
  3. Arrange pineapple slices and cherries in the brown sugar mixture in the pan.
  4. Prepare the gingerbread mix according to package directions.
  5. Pour the gingerbread batter over the fruit in the pan.
  6. Bake at 350°F for 50 minutes.
  7. Allow to cool slightly before inverting onto a serving plate.
  8. Serve warm or at room temperature, optionally with whipped cream.
