Classic Basil Pesto

- Preheat oven to 400°F. Spread pine nuts on a baking tray. Bake for 3-5 mins, until golden brown. Transfer to a plate and let cool slightly.
- In a food processor, process nuts, basil, cheese and garlic. Add half of the oil and pulse until well combined.
- Add remaining oil (through chute with motor running, if using a large processor) for a smooth consistency. Season to taste with salt and pepper.
- Transfer to an airtight container and pour a little more olive oil over the top to prevent discoloration. Store in the fridge.
