Classic Red Beans

Ingredients

  • 1 lb. bag red kidney beans
  • 8 c. water
  • 1 lb. pkg. smoke sausage, sliced 1/4 inch thick
  • 2 Tbsp. bay leaves
  • 1 large onion, chopped
  • 1/2 bell pepper, chopped
  • 4 cloves garlic
  • 1 1/4 tsp. salt
  • 1 tsp. Tabasco pepper sauce

Instructions

  1. Wash beans in a strainer and discard any grit or discolored beans.
  2. Put beans and the rest of the ingredients in an 8-quart pot.
  3. Bring to a boil.
  4. Cover and reduce heat to simmer.
  5. Stirring often, cook beans about 2 1/2 hours or until beans are tender and creamy.
  6. Serve over fluffy long grain rice.
  7. You can also put a good dollop of sour cream on top of your serving of red beans and rice.
  8. It's delicious!
