Ingredients

  • 1 stick butter (at room temperature)
  • 1/3 cup powdered sugar (unsifted)
  • 1/4 teaspoon vanilla
  • 1 cup flour

Instructions

  1. Cream the butter until light and fluffy.
  2. Mix in powdered sugar, then vanilla.
  3. Work in the flour until the dough comes together.
  4. Knead the dough on an unfloured surface until smooth.
  5. Spray a shortbread or jelly roll pan lightly with nonstick spray.
  6. Put the ball of dough in the middle of the pan and spread it to the sides.
  7. Prick the entire surface with a fork.
  8. Bake at 325°F (163°C) for 30 to 35 minutes until very lightly browned.
  9. Ensure the middle of the shortbread is completely cooked.
  10. Cool for 10 minutes, then loosen with a knife and flip onto a cutting board.
  11. Cut into desired shapes while still warm.
  12. Top with lemon curd, jelly, jam, or dip in chocolate if desired.
