Ingredients

  • 1 box yellow cake mix
  • 1/3 cup oil
  • 1 teaspoon vanilla
  • 2 eggs
  • 1/2 pound Claxton fruit cake

Instructions

  1. Dice the fruit cake into 1/4-inch pieces and set aside.
  2. Mix cake mix, eggs, oil, and vanilla in a large bowl until smooth.
  3. Add the diced fruit cake bits to the batter and stir to combine.
  4. Roll the mixture into small balls and place them on an ungreased cookie sheet.
  5. Bake at 375°F (190°C) for 10 to 12 minutes until slightly brown.
  6. Allow cookies to cool, then remove from the cookie sheet and place in a sealed bowl.
