Ingredients

  • 1 pkg yellow cake mix (no pudding in mix)
  • 1 (4 serving size) pkg vanilla instant pudding
  • 1 1/3 cup water
  • 4 eggs
  • 1/4 cup oil
  • 1 1/3 cup coconut
  • 1 cup chopped walnuts

Instructions

  1. Combine the yellow cake mix, vanilla instant pudding, water, eggs, and oil in a mixing bowl.
  2. Beat the mixture for 4 minutes at medium speed.
  3. Stir in the coconut and chopped walnuts until evenly distributed.
  4. Pour the batter into a greased and floured tube pan.
  5. Bake at 325°F (160°C) for 1 hour.
  6. Allow the cake to cool for 15 minutes in the pan, then remove and cool completely.
  7. Frost the cake with cream cheese frosting.
  8. Spread remaining coconut on top of the frosted cake.
