Ingredients

  • 2 pkg fresh coconut
  • 3 egg whites
  • 1 box powdered sugar
  • 1 tsp vanilla
  • 3 c Crisco
  • pinch of salt

Instructions

  1. Beat egg whites until stiff peaks form.
  2. Gradually pour sifted powdered sugar into the beaten egg whites and mix well.
  3. Add Crisco (vegetable shortening) to the mixture and beat until incorporated.
  4. Stir in vanilla and a pinch of salt while continuing to beat the mixture.
  5. Spread the icing evenly over the cake.
  6. Sprinkle fresh shredded coconut on top of the iced cake.
