Ingredients

  • 80 Ritz crackers, crushed
  • 1 1/2 sticks melted oleo
  • 2 small boxes instant coconut cream pudding mix
  • 1/2 gallon vanilla ice cream, softened
  • 8 oz Cool Whip

Instructions

  1. Mix together crushed Ritz crackers and melted oleo.
  2. Pat the mixture into a 9 x 13-inch pan to form the crust.
  3. In a bowl, mix instant coconut cream pudding with 1 1/2 cups milk until thick.
  4. Add softened vanilla ice cream to the pudding mixture and mix well.
  5. Pour the pudding and ice cream mixture over the crust.
  6. Spread Cool Whip evenly over the pudding layer.
  7. Save some crushed crackers for topping.
  8. May be frozen before serving.
