Ingredients

  • 1 cup sugar
  • 1/4 cup margarine, softened
  • 1 cup milk
  • 1 egg
  • 1 1/2 teaspoons cinnamon
  • 1 teaspoon vanilla
  • 1 teaspoon orange extract
  • 2 cups flour
  • 3 teaspoons baking powder
  • 1 teaspoon salt
  • 1 cup whole cranberry sauce
  • 1/2 cup chopped pecans

Instructions

  1. Cream sugar and margarine together until smooth.
  2. Add milk, egg, cinnamon, vanilla, and orange extract; beat well.
  3. In a separate bowl, combine flour, baking powder, and salt.
  4. Gradually add the dry ingredients to the wet mixture, mixing just until combined.
  5. Fold in cranberry sauce and chopped pecans.
  6. Pour the batter into a greased and floured 9 x 5 x 3-inch loaf pan.
  7. Bake in a 350°F (175°C) oven for 60 to 65 minutes or until a toothpick inserted in the center comes out clean.
