Coconut Crumb Cake

Ingredients

  • 2 1/4 c. flour
  • 1 c. sugar
  • 3/4 c. butter
  • 1 1/2 c. flaked coconut
  • 1/2 tsp. salt
  • 1 tsp. cinnamon
  • 1/2 tsp. cloves
  • 1 egg
  • 1 c. buttermilk
  • 1 tsp. soda

Instructions

  1. In mixing bowl, mix flour and sugar; mix in butter until mealy.
  2. Mix 1 cup of mixture with 3/4 cup coconut (reserve).
  3. To the rest of the mixture add 3/4 cup coconut, salt, cinnamon and cloves.
  4. Stir together the milk and soda; add this to the mixture. Add egg and mix well with spoon.
  5. Pour into 9 x 13-inch pan. Sprinkle reserved crumb mixture on top.
  6. Bake in 375° oven for 35 minutes.
