Ingredients

  • 2 cups yellow split peas
  • 1 (14 ounce) can light coconut milk
  • 4 cups low sodium vegetable broth
  • 1 small yellow onion, slices
  • 3 garlic cloves, pressed
  • 1 tablespoon fresh ginger
  • 2 teaspoons turmeric
  • 1 teaspoon salt
  • 4 tablespoons cilantro, for garnish

Instructions

  1. Combine all ingredients except for cilantro in saucepan and bring to a boil.
  2. Simmer uncovered about 30 minutes, or until peas are tender and it begins to thicken.
  3. Serve over brown rice and garnish with cilantro.
