Ingredients

  • 1 cup flour
  • 1/4 cup packed brown sugar
  • 2 eggs
  • 1 cup packed brown sugar
  • 1/4 cup flour
  • 1/2 teaspoon baking powder
  • 1 1/3 cups flaked coconut

Instructions

  1. Combine 1 cup flour and 1/4 cup packed brown sugar in a bowl.
  2. Add butter and mix thoroughly.
  3. Press the mixture firmly into a 9-inch greased pan to form the crust.
  4. Bake at 350°F (175°C) for 15 minutes.
  5. Meanwhile, beat eggs until thick and then gradually add 1 cup brown sugar.
  6. Beat until light and fluffy.
  7. Mix 1/4 cup flour with baking powder.
  8. Fold the flour mixture into the egg mixture.
  9. Add 1 1/3 cups flaked coconut and nuts.
  10. Spread the coconut mixture over the baked crust.
  11. Bake for an additional 20 to 25 minutes.
  12. Cool and cut into squares.
