Ingredients

  • 1 (9-inch) pie shell
  • 4 large eggs, separated
  • 1/2 cup fresh lemon juice
  • 1 1/4 cups sugar
  • 5 tablespoons cornstarch
  • 1/2 teaspoon salt
  • 1 1/2 cups boiling water
  • 1 tablespoon grated lemon rind
  • 2 tablespoons butter
  • 1/4 cup coconut

Instructions

  1. Combine egg yolks and lemon juice; set aside.
  2. In a heavy saucepan, combine sugar, cornstarch and salt.
  3. Add boiling water, stirring constantly.
  4. Cook over medium heat; bring to a boil.
  5. Turn heat down to low; cook, stirring, for 2 more minutes.
  6. Remove from heat.
  7. Stir in lemon rind, butter and coconut.
  8. Pour into pie shell.
