Ingredients

  • 1/3 cup unbleached all-purpose flour
  • 2 1/2 cups shredded coconut
  • 1/8 teaspoon salt
  • 2/3 cup sweetened condensed milk
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat oven to 350°F.
  2. Grease a cookie sheet well.
  3. Mix flour, shredded coconut, and salt together in a bowl.
  4. Pour in sweetened condensed milk and vanilla extract.
  5. Stir well to make a thick batter.
  6. Drop batter by quarter cupfuls onto the prepared cookie sheet, allowing an inch of space between cookies.
  7. Bake for 20 minutes or until golden brown.
